I would definitely get with the son (and or his fiance') and find out what they want. My own experiences with singers in wedding ceremonies have been when the couple asks a friend to sing something that is special to them (usually because they needed a way to incorporate said friend into the ceremony but already had all the bride's maids/groom's men/ushers they had room for).
Maybe that's not the most helpful answer but it is his wedding, not his mom's (even though mom's tend to think otherwise :P), so he should have the final vote in what you sing.
